Enchiladas Acapulco

Savory enchiladas with a blend of ground beef, tomato sauce, kidney beans, and Velveeta cheese, baked to perfection and topped with chopped green peppers and tomatoes.

Ingredients

2 Pounds

Ground beef

1 1/2 Ounce

Tomato sauce

1 3/4 Ounce

Kidney beans

drained

6 Wholes

Tortillas

1/2 Pound

Velveeta mexican cheese spread

cubed

3/4 Cups

Chopped green pepper

1 1/2 Cup

Chopped tomato

Instructions

Brown meat, drain.

Add tomato sauce & 1/2 cup onions. Cook over medium heat 5 minutes.

Dip tortillas in hot oil, drain. Fill each with 1/4 cup meat mixture, roll up.

Place seam side down in 12 x 8 baking dish.

Cook till cheese melts.

Bake at 350 degrees for 20 min.

Top with remaining cheese, bake uncovered 5-8 min.

Top with remaining peppers & tomatoes. Serve.
